Removable base
The Crust

Unsalted butter and digestives biscuits

To be crushed.

To be melted.

Pour the digestives biscuits crumbs in a large bowl.

Mix in the melted butter until well combined. Press the crust evenly and firmly over the bottom of the baking tin. Refrigerate it while preparing the filling.
The Filling


Philadelphia cream cheese, egg yolks, whipping cream, water, grated lemon zest, castor sugar.

Pour the fillingover the crust and smoothen the surface. Refrigerate again while preparing the lemon curd.
The Lemon Curd

Made of lemon juice, sugar, egg yolks and butter.

Pour the lemon curd over the cheesecake. Refrigerate until firm.
The final product – Lemon Cheesecake




Yummy… though it was a little soft… 🙂
